What happens when your mom visits, and you drop the bag of bananas she brought you? Now that they’re bruised and damaged and no one wants to eat them, do you chuck them out with the rubbish?

Hell no. there’s nothing better than over ripe bananas to make a simple and delish banana bread.

So here’s a simple recipe, adapted from AllRecipes.com.

Banana Bread:

Ingredients:

  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • ½ cup brown sugar
  • 1 tablespoon molasses
  • ½ cup vegetable oil
  • 2 eggs
  • 3 – 4 really ripe and smooshed bananas, mashed
  • 1 – 2 teaspoons of poppy seeds to sprinkle

Method:

Sift all the dry ingredients together in one bowl: flour, baking soda and salt.

Mix all the wet ingredients in another bowl: whisk the sugar, molasses and eggs together. Add the vegetable oil and bananas and mix well. Ensure the bananas are well mashed.

Add the dry ingredients to the wet ingredients and beat well.

Preheat oven to 180°C for about 5 – 10 minutes. Line a bread pan with baking parchment or oil and dust it with flour. Pour in your batter into bread pan, sprinkle the poppy seeds on top, and bake for 45 – 50 minutes. Keep checking at the 40 minute mark, and cover the top of your bread pan with foil if you don’t want it to brown too much.

Remove from oven when ready – test with a skewer to confirm. If ready, place on cooling rack for about 20 minutes. Enjoy!
