It’s back to the cooler weather around Nairobi, and in some places, plain freezing in the evenings.
I find that soup is one of the best meals to warm you up on a cold evening, yet make sure that you’re full and won’t be up rummaging in the fridge later.
This is not the kind of thin soup that will run through your systems in thirty minutes; it’s a filling meal.
So, after a great harvest from the kitchen garden, I had all the ingredients I needed:
- 2 chicken breasts
- Green onion stems
- Herbs: I preferred to use fresh basil
- Assortment of vegetables: Potatoes, parsnip, carrots, peas, sweet corn, tomatoes and more.
It’s pretty simple to prepare:
Dice everything that can be diced, including the chicken. Put some oil in a cooking pot, and add in the onions. Saute for a moment, and add in the sweet corn. Add in the chicken cubes, and let them cook for a moment.
Add in the rest of the vegetables. You can get as creative as you can. I simply added the vegetables to make a meal enough for 5 people. Add 4 cups of water, and let simmer for 30 minutes. Add salt to taste, pepper if you wish, and the basil/herb of choice.
Serve HOT, with bread rolls to accompany.
